A delicious old-fashioned fruit cake, today’s recipe for Farmhouse Sultana & Cherry Cake was taken from an old copy of Farmhouse Fare.

It’s a light fruit cake packed with juicy sultanas and Glacé cherries, and is perfect for elevensesafternoon tea or for summer picnics.

Farmhouse Sultana & Cherry Cake

You soak the sultanas overnight, which makes them beautifully plump and juicy. The original recipe suggests adding chopped nuts as an optional extra, which I have done in the past.

Make this Farmhouse Sultana & Cherry Cake with real butter, not margarine, and it will keep for at least a week in a sealed cake tin.

There’s no need to add any spices, as the sultanas and cherries really do sing in this cake – and the buttery crumb is delightful.

I have served this cake buttered when it gets a bit stale, and we all love it when it’s served that way. As with all fruit cakes, a lovely piece of cheese goes with it extremely well.

If you want to use the recipe for a last-minute Christmas cake, as I have done in the past, then soak the sultanas in sherry, and add the chopped nuts as well as some mixed peel.

You can make this cake in a lof tin, but we prefer it served in wedges like a proper fruit cake, and the texture is different from a tea loaf.

Ingredients

  • 200g (7ozs) sultanas
  • 50g (2ozs) glacé cherries, halved
  • 125g (4ozs) butter, cut into small pieces
  • 175g (6ozs) sugar
  • 2 medium eggs, beaten
  • 1 teaspoon almond essence (or extract)
  • 175g (6ozs) SR flour
  • Pinch of salt
  • 50g (2ozs) chopped nuts (optional)

Instructions

  1. Cover sultanas with water and soak overnight. Next day bruing them to a boil and then turn off the heat.
  2. Strain the sultanas and mix them, whilst still hot, with the butter. Add the cherries.
  3. Add the sugar, eggs, and almond essence.
  4. Stir in the flour and the salt.
  5. Lastly, add the nuts if using them. Mix well.
  6. Grease and line a 20cm (8″) round cake tin. Spoon the mixture into the tin and smooth the top.
  7. Bake in moderate oven, Gas 4, 350F, 180C for 30 minutes. Lower the heat to to cool, Gas 2, 300F. 150C, and bake until firm to touch in the centre, about 30 minutes more.
