I am on a frivolous, festive baking path right now, as I prepare for Christmas. And, today’s recipe for Air-Fryer Mince Pie Pop Tarts is right up there in the fivolity stakes.

Pop Tarts aren’t something that I grew up with – and even if we had access to them in the UK, I’m not sure my mother would have approved of them!

The first time I came across them was when I visited the States in my early twenties. A roommate popped them in a toaster one morning, and I’m sad to say that I was hooked.

I was captivated by the “fast food”element, and the fact they didn’t need refrigeration, plus, they were just the right side of “sinfully good” with all that jam and icing.

My recipe today is healthier, insofar as these Air-Fryer Mince Pie Pop Tarts are air-fried and use homemade mincemeat.

Of course, these are still “sweet pastries” with icing sugar and pastry, so they are essentially a treat for special breakfasts and snackage.

As a fully paid up mince pie addict, these tick all the mince pie boxes, as they are light and crumbly, with a boozy mincemeat filling, with sweet icing and fun seasonal sprinkles.

I used a ready-made and ready-rolled pack of shortcrust pastry, that weighed 320g, and managed to make 4 large pop tarts.

However, I know ready-made shortcrust pastry sizes vary, from 320g to 375g and sometimes even 395g – hence the fact that the yeild will be between 4 and 6 pop tarts.

I really hope you enjoy these frivolous sweet treats – they would be great for a fun breakfast on Christmas morning, or throughout the Christmas holidays! Karen

  • No air fryer? No problem!
  • To oven bake, line a baking tray with baking paper, and bake the tarts for 20 minutes at 200C/180C Fan/400F/Gas mark 6. Remove and allow to cool before icing as before.
  • Use good quality mincemeat or homemade mincemeat. I used my recipe for Boozy Fat-Free Mincemeat.
  • Sprinkle slivered almonds over the icing for a nutty pop tart finish.
  • Add chopped glace cherries to the mincemeat.
  • Use puff pastry for a change, it still works as well as shortcrust pastry.

Ingredients

  • 1 x 320g to 375g ready-made and ready-rolled shortcrust pastry
  • 4 to 6 heaped tablespoons mincemeat (homemade is best)
  • 1 egg, beaten
  • 8 tablespoons icing sugar, sifted
  • 1 to 2 teaspoons water
  • Hundreds and thousands or festive sprinkles

Instructions

  1. Unroll the pastry and cut into either 8 or 12 rectangles of equal size.
  2. On half of the pastry rectangles, spoon the mincemeat into the middle and then spread it out, leaving a border all around the edges.
  3. Brush the borders with the beaten egg, and then place the other pastry rectangles on top of the filling.
  4. Press firmly around the edges to form a seal. then crimp the edges with a fork.
  5. Brush the tops of the mince pie pop tarts with more beaten egg, then prick the tops of the tarts with a fork.
  6. Place the tarts in the basket of your air fryer, lined with baking paper (I used my Ninja Foodi MAX Health Grill & Air Fryer)
  7. Air fry the tarts at 170C for 12 to 15 minutes, turning them over for the last 5 minutes to crisp the underneath, if using a solid grill or drawer and not a basket. (If you have a BAKE setting, use that – same time and temperature)
  8. Remove the pop tarts and allow them to cool on a wire rack. Then make the icing by adding the water gradually to the sifted icing sugar, until you have a thick but spoonable icing.
  9. Glaze the pop tarts with the icing, then scatter the hundreds and thousands or sprinkles over the wet icing. Allow to set and harden before serving and eating.
  10. These will keep for up to 3 or 4 days in an airtight container.

Notes

No air fryer? No problem!
