I’m so pleased with this slow cooker (air fryer) recipe, as the turkey crown was lovely and moist, and not dry as often happens when roasting a turkey crown.

The slow cooking doesn’t give you a golden, crispy skin, but as I cooked this in my Ninja Multi Cooker, I was able to crisp the skin up on the GRILL function at the end of cooking.

If you don’t have a Ninja Multi Cooker, or an Instant Pot Multi Cooker, than you can just pop the turkey into the oven or under the grill, to crisp up the skin

I cooked two turkey crowns recently for our village community hub Christmas party, and everyone raved about how tasty the turkey was, which was brilliant feedback.

The times given are for a turkey crown between 2.5kg (5 and 1/2lbs) and 2.7kg (6lbs) and having cooked both weights, the times are spot on, when cooking on HIGH in the slow cooker.

We served the cooked turkey breast in slices, with Pigs-in-Blankets and my special Stuffing Loaf in bread buns, with cranberry sauce of course.

As well as these Christmas Dinner in a Buns, villagers were also treated to Mince Pies and Christmas Cake, with a glass of Sherry – and a very merry time was had by all!

This Christmas, I am cooking for five, so a turkey crown will be perfect for all of us, and I will definitely be cooking it this way, with a bacon lattice maybe.

  • You can make gravy from the turkey juices left; remove the bay leaves, and using a hand-held blender, blend the onions into the turkey and wine juices. Adjust the thickness of the gravy by adding more wine or water. Ladle the gravy into a gravy boat if serving straight away, or ladle it into a saucepan or a heatproof jug to reheat later, in the microwave or on the stove top.
  • Adjust the seasonings to taste, such as spicy, herb or seasoning salts such as chicken seasoning.
  • Arrange smoked streaky bacon in a lattice pattern over the turkey crown, and cook as before, grilling at the end as before. Serve the streaky bacon alongside the sliced turkey.

Ingredients

  • 2.5kg to 2.7kg turkey crown
  • 1 tablespoon softened butter
  • 2 tablespoons olive oil
  • 1 teaspoon garlic and herb seasoning
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon smoked paprika
  • 2 large onions, peeled and cut in half
  • 2 bay leaves
  • 1 x wine glass of white wine or water

Instructions

  1. Mix the butter, olive oil and seasonings together.
  2. Place the halved onions into the slow cooker or Ninja/multi cooker pot, add the bay leaves and the wine or water.
  3. Sit the turkey crown on top of the onions and spoon the seasoned butter and oil mixture over the turkey.
  4. Close the lid and set the cooking mode to SLOW COOK on HIGH for 5 and 1/2 hours for a 2.5kg turkey crown and 6 hours for 2.7kg turkey crown.
  5. Baste the turkey two or three times (at the most) throughout the cooking time – I find using a large pastry brush is the easiest way.
  6. At the end of the cooking time, set the Ninja/multi cooker to GRILL at 240C and set the time to 10 minutes, checking after 6 or 7 minutes that the skin is not burning. (If you are using a standard slow cooker, carefully take the turkey crown out, and place it in a roasting tin, place under the grill for 10 to 15 minutes, or until the skin is crispy and golden brown)
  7. Remove the turkey crown from the pot, or from under the oven grill and allow to sit for 30 minutes before carving into slices and serving.

Notes
