A Fabulous Recipe for Breakfast or Brunch

What could be more delightful than a crispy bacon sandwich, or crispy bacon with fried eggs and toast for Easter brunch?
Well, how about marmalade glazed crispy bacon – cooked in the oven, or the air fryer, as I did last time I made this recipe.

My delectable bacon was glazed with La Vieja Fábrica, an authentic Sevillian marmalade, crafted in Seville using the finest Seville oranges, renowned for their distinctive flavour.
In fact, as an avid marmalade maker, this is the best marmalade I’ve tried, other than my own of course!

The slow, gentle production process preserves the natural flavour of the fruit ensuring each jar delivers the delicious, authentic taste of traditional marmalade – all of their marmalades are simply sublime.
For my Marmalade Glazed Bacon recipe I used their delectable Seville Orange St Clements, which use locally grown Seville oranges, blended with zesty lemons.

The sweet and tart citrus flavours are the perfect marriage with salty, smoked back bacon – it’s a real flavour fusion.
They also make Seville Orange Fine Cut, Seville Orange Thick Cut, and Seville Orange No Peel marmalade too.

Ingredients
- 12 rashers dry-cure smoked back bacon
- 4 tablespoons Seville Orange St Clements marmalade
Instructions
1. Preheat oven to 180C/350F and place bacon rashers side by side on a large baking sheet.
2. Brush (or spoon) the marmalade over the bacon rashers evenly.
3. Place in the oven and cook for 15 to 20 minutes until crispy.
4. Serve straight away with eggs, tomatoes, sausages or in freshly roasted bread for a sandwich.
5. To air-fry – cook in batches and place bacon in air-fryer drawers or basket. Spoon or brush marmalade over the rashers. Press the air fryer setting and set to 180C for 10 minutes.

Use any marmlade you have to hand, homemade marmalade works well in this recipe.
Bacon bacon is best, but streaky bacon works well too.
