My Version of the M & S Ltd Edition Strawberries and Creme Sandwich

Strawberries & Cream Sandwich. Can’t get your hands on the M & S Ltd edition viral Red Diamond Strawberry & Creme Sandwich? Well, why not make your own?
I made a FULL round today for brunch – and it was delicious! Almost like a cream tea, as in scone, jam and cream, but with a slight creamy cheese flavour.

Based on the Japanese Fruit Sando (furutsu sando), I used sweetened, sliced brioche bread, with whipped cream cheese and double cream, plus KING SIZE fresh English strawberries.
The verdict? DELECTABLE, really lovely – light and fruity – similar to sponge cake, but not. The recipe method, such as it is, is shared below and please do let me know:

Notes & Ingredients:
- I used large strawberries, but any size will do, as long as they are all the same size when arranged in the sandwich.
- I used Waitrose sliced thick sliced brioche.
- You can cut the crusts off for a posher sandwich, I didn’t bother.
- 2 x slices brioche bread (thick slices)
- 4 x large fresh strawberries, cut in half then sliced
- 2 x tablespoons cream cheese whipped with 1 x tablespoon thick double cream, or creme fraiche

Ingredients
- 2 x slices brioche bread (thick slices)
- 4 x large fresh strawberries, cut in half then sliced
- 2 x tablespoons cream cheese whipped with 1 x tablespoon thick double cream, or creme fraiche
Instructions
1. Cut the 2 slices of brioche in half, on the diagonal.
2. Spread a little whipped cream cheese on the bottom slice, so that when you arrange the strawberries along the cut edge, you will see them. Place the rest of the cut strawberries behind them, so the sandwich has all of the strawberries on the whipped cream cheese.
3. Spoon the rest of the whipped cream cheese mixture over the strawberries, and ease some of it nto the gaps between the strawberries.
4. Place the other slice on top of the strawberries and cream cheese mixture, to make a diagonal sandwich. (triangles)
5. Turn the telly on, tune into Wimbledon, and serve with a cuppa or a glass of pink fizz!
