I made this Cheese & Spring Onion Soda bread for St Patrick’s Day, which was on the 17th March.
It’s a simple basic recipe for soda bread, with added cheese and spring onions, making it almost a meal in itself.
Serve in wedges with good butter and extra cheese and onions for the perfect light supper or tea. Or, as an accompaniment to soup, stew or casseroles.
A classic soda bread recipe has just four ingredients: flour, soda, buttermilk and salt. The added cheese and onions really works well with these basic ingredients.
This recipe for Cheese & Spring Onion Soda Bread would be perfect for the Easter tea time table, and Mother’s Day too.
This recipe makes 2 x soda breads….and, don’t forget to make the cross on top of the bread, so the fairies can fly out too!
Culinary Notes:
- Instead of buttermilk, you can use 200g natural yogurt mixed with 100ml milk
- Use Cheddar, Cheshire or Wensleydale cheese
- Use chives in place of spring onions

Ingredients
- 450g plain white flour
- 1 teaspoon bicarbonate of soda
- 1 1/2 teaspoons cream of tartar
- 1 teaspoon salt
- 1 bunch of spring onions, chopped
- 150g cheese, crumbled or coarsely grated
- 300ml butter milk plus some for the glaze
- OPTIONAL:
- 30g butter
Instructions
Pre-heat oven to 220C/425F/Gas mark 7 and grease and/or line a baking tray.
Sift all the dry ingredients into a mixing bowl and rub in the butter, if using, until it resembles fine breadcrumbs.
Stir in most of the spring onions and cheese, keeping a little back for the top of the loaf.
Add the buttermilk and mix with your hands to form a dough – do not over mix as it will make the soda bread tough.
Turn the dough out onto a floured board and shape into 2 x rounds about 4cm/1 1/2″ thick.
Place the soda breads onto the prepared baking tray and cut a deep cross in the top.
Brush with a little milk, then scatter the remaining spring onions and cheese on top
Bake in pre-heated oven for 25 to 30 minutes until they are well risen and golden brown.
Remove from the oven and cool on a wire rack or wrap in a clean tea towel for a soft crust.
Serve warm with salted butter.
The optional addition of butter helps the soda bread keep for longer.
